Jin Hua Fish Head Bee Hoon – Cantonese Style Fish Soup At Maxwell Food Centre

I’ve heard many raves about Jin Hua Fish Head Bee Hoon at Maxwell Food Centre, so I decided to check it out for myself recently.


This longstanding fish soup stall is very popular with the CBD folks. It has been at the hawker centre for over 20 years.

They serve the Cantonese-style fish soup that is known for having rich flavours. This is different from the Teochew version which focuses on having a cleaner taste profile instead.

To achieve this rich taste, the broth is cooked using numerous ingredients such as mature chickens, fish bones, ginger, yellow beans, shrimp paste, etc.

I visited the stall on a Saturday at 12.15pm and there were five people queueing ahead of me. I had to wait in line for around 10 minutes.

Note that there is another “Jin Hua” fish soup stall with a similar signboard at Old Airport Road Hawker Centre, but I’m not sure if the two stalls are related.

Menu


The menu offers fish soup with sliced fish or fried fish, with an option of adding evaporated milk. You can pair the fish soup with thick bee hoon, porridge, or rice.

The pricing is very reasonable, starting from just $4.50.

Fish Head Bee Hoon is available too, though it is more expensive with prices starting from $8.

Fried Fish Meat Bee Hoon


I ordered the medium-sized Fried Fish Meat Bee Hoon ($5.50) with milk.

The broth was especially addictive! It was robust, creamy, and carried a pleasant sweetness from the milk. The ginger slices added a sharp aroma.


On the whole this was a well-executed soup with many flavours coming together perfectly. And it was so satisfying to savour it with the slippery smooth bee hoon.


The fried fish strips were well battered and fried to perfection. They were fresh and tasty, and I really liked how the fish had absorbed the wonderful flavours of the soup.

The vegetables and fried shallots provided additional flavours and sweetness. Chilli sauce is available if you want to add a spicy kick to the dish.

Conclusion


After trying Jin Hua Fish Head Bee Hoon for myself, I can say it’s definitely worth the hype. Try to go during non-peak hours to avoid the queue. If not, just wait patiently because you will be rewarded with the unadulterated comfort of a bowl of tasty Cantonese fish soup.
